Five Can Mexican Soup - QUICK and EASY!


Here is a quick little recipe that I wanted to share for those nights when you want a quick meal and you might not have fresh ingredients on hand. Going camping or to your cabin? Take these with you or leave the ingredients at your summer cabin so you can always have a great option of making a quick hearty soup. I try to keep all of these ingredients on hand in my house at all times so that I always have an option to make this soup. Higher in sodium than I would normally like (given the canned soup concept), but life could be worse. Given that it does make 10 servings (I usually serve it in 5), it does freeze well if you are not feeding a large herd.


Number of Servings: 10
140 calories per serving

Ingredients:

1 can Fat Free Refried Beans
1 can Chicken Broth
1 can Corn
1 can Black beans 
1 can Diced tomatoes

Directions:

Put it all in a pot and bring to a boil, simmer until the refried beans are no longer as thick. Add hot sauce to taste.

Additional Toppings: 

Husband friendly version would include adding chicken or beef, cheese, sour cream, or cilantro.

I can't find FAT FREE refried beans....any suggestions?

Ortega and Rosarita brands carry fat free. I have found at walmart and chain stores that are more us based. I have struggled in local grocery stores. If not, just use the regular!
