PB2 Granola Bars with Craisins
160 calories per bar (16 servings)

These granola bars are delicious and will fill you up! Not only do they freeze well, they are quite delicious served crumbled over frozen yogurt. You can subsitute out the craisins for raisins, you can add chocolate chips, you can add in some nuts of your choosing. I made about 4-5 different granola bar recipes before I landed on this one, taking the best and worst of each recipe for the killer granola bar.

    Oats, 1.5 cup
    Brown Sugar, .25 cup, packed
    Splenda Sugar Blend, 3 tsp
    Wheat bran, crude, .5 cup
    Flax Seed Meal (ground flax), 4 tbsp
    Cinnamon, ground, 1 tbsp
    Flour, white, .75 cup
    Ocean Spray, Craisins Original Sweetened Dried Cranberries 1/3 cup (30g), 1 serving Sunflower Seeds, without salt, .5 cup, hulled
    Salt, .75 tsp
    Honey, .25 cup
    Egg, fresh, 1 large
    Vanilla Extract, 2 tsp
    Dates, 5 dates
    Coconut, raw, .5 cup, shredded
    Unsweetened Apple Sauce .75 cup
    P2B chocolate or peanut butter (4tbls)
1. Preheat oven to 350 degrees. Grease 9x13 baking pan.

2. In large bowl, mix together the oats, brown sugar, splenda, wheat bran, flax, cinnamon, flour,
sunflower seeds, flax seeds, craisins, dates and coconut.

3. Make a well in the centre, pour in honey, egg, apple sauce, vanilla, peanut butter. Mix Well. Pat the mixture evenly into the pan.

Bake for about 30 minutes, but watch the baking time. If you leave them too long they will be too dry. Cool for 5 minutes and then cut into bars. Do not allow the bars to cool completely or they will be too hard to cut.
