100 Calorie Ice Cream

Mango Ice Cream
I'm sure many of you have seen the one ingredient banana ice cream recipe that is all over Pinterest and facebook. My sister tried it and gave me a sample and it was really good. A friend at work made the banana and graciously shared her photos, so have a look below. For this posting,  I decided to try a different fruit to see if the rumors were true that you can use any fruit to make the one ingredient ice cream.

In this case, I used three cups of mango and served it up three ways for a 100 calorie treat. Since I don't have a food processor, my blender wasn't strong enough to make the hard ice cream like I wanted and I had to add a little bit of almond milk to avoid burning out my blender, but the results were fabulous  I could have also put the mango ice cream back in the freezer to make harder, but who is that patient?

Ice Cream Options: 
Blueberries - Ginger
Strawberry - Banana
Pineapple - Mint
Peach - Maple Syrup
Mango - Vanilla
Banana - Cinnamon
Banana - Cocoa
Raspberries - Coconut
Banana - Nutella

Mango Ice Cream: 

Jump for joy that mangoes are in season and buy as many as you can. 

Peel the mango
Cut the mango into small cubes and put in a dish or lay flat on a tray

In retrospect, a flat try would have worked way better, but I didn't have room in my freezer for a big flat tray. 
I froze for 5 hours. It was rock hard frozen. I then left on the counter for 30 minutes to warm up a bit. I put in my blender with some vanilla and some almond milk and blended until it was all broken up. Served it up and enjoyed! My three guests (all men), who were playing poker, all cleaned their bowls pretty quickly.
