Arugula Salad with Capers, Fried Mushrooms, Prawns and Goat Cheese

One of my favorite salads! We probably enjoy this salad once a week and would eat it more if we could find Arugula - seems to be a black market lettuce or something as I can never find it!. The combination of the arugula, capers, warm mushrooms and cheese is wonderful! The picture above is served with fresh prawns, we also have done grilled prawns. Sometimes we substitute feta cheese as well for the goat cheese. Wonton strips are also a great addition. If you fall in love with this salad, then head to Costco to get your capers. You can get a 6 pack for the same price as you will probably pay for one jar at your local grocery store. 

Ingredients: 
  • Fresh argulua
  • Capers
  • Feta or goat cheese
  • Mushrooms
  • Shrimp or prawns
  • Dressing (see below for options)

Dressing:

Fry those mushrooms, nice and brown, throw in some garlic!
There are a number of options for the dressing. If you can find it (or live in the states), then I recommend Annies Goddess dressing. It is a Tahini based dressing and suits this salad perfectly! Good luck finding it though, in fact, must be an issue in a lot of places as I found a ton of websites trying to mimic the perfect dressing. This person tried 10 different attempts to copycat it!

If neither one of those works, what I do is to find a Tahini based dressing and we cut it with some low fat sour cream and some hot sauce and use that has our version of the copycat dressing.

For around 350 calories per serving, you will get a large plate of salad with lots of prawns or shrimps!
I made this posting off of a large serving that 6 of us ate as an appie before we went out for dinner. If you are making for yourself and want to know how much to make for the 350 calories, here is my breakdown:



  • 2-3 cups fresh arugula
  • 4 tbls capers
  • 3 tbls Goat or Feta cheese
  • 1.5 cup fried mushrooms
  • 1 cup baby shrimp
  • 1 tbs goddess dressing
  • 2 tbls wonton strips
