The other day I bought some prepared red cabbage and have been trying to figure out the best way to use it. When I opened the jar and saw that it was shredded, I knew that I wanted to match the rest of the foods to this shredded consistency. And in under 10 minutes, asian slaw is born. Since I was on my own, I only made enough for one serving, but it can easily be increased to serve larger crowds.
Daikon Root, 1/2 cup shredded
Carrot, 1 cup shredded
Coleslaw, 2 cups
Pickled Cabbage, 1/2 cup
Japanese Vinaigrette, 2 tbls
Ja Jan Sauce, 2 tbls
Sliced Jalapenos, to taste
Cilantro, to taste
Green Onion, to taste
There really isn't anything for me to say. Chop, slice and put all of the veggies into a bowl.
For the dressing, I mixed two tablespoons of this japanese dressing (its only 30 calories for 2 tbls) with 2 tbls of the Ja Jan Sauce. I found this sauce in China Town and really like it! It is made with bean curd and eggplant. I recommend you go find it your local grocery store.
