Spicy Chicken Mexican Soup topped with Avocado, Cilantro, Lime & Green Onions
This is my version of the popular Skinny Taste recipe for Chicken & Avocado Soup. I love this soup and have made it a couple of times off her website. The issue, well not a bad issue, was I wanted a recipe that could easily be made for one or two or frozen. The skinny taste recipe (while delicious) is best served fresh and you don't want to add the avocado and then try to freeze or save the soup overnight. I also wanted the base to be a bit spicier. The way I have designed this recipe as well is that you can make the soup base and make as much as you want and freeze the portions. I then separated out the toppings so right before you go to serve you can add the toppings.
I am struggling to take a good photo with these bowls. It doesn't do it justice for how large of a portion size fits in these bowls. And I was so hungry that taking the photos was done a bit hasty as I wanted to eat the soup!
Soup Base (100 calories a cup)
7.5 ounces chicken
1 carton low sodium chicken broth
1 can diced tomatoes (low sodium)
1/2 sweet onion
1/2 tbls oil
Salt & Pepper
Serving sizes that I recommend would be 3 cups of the soup base or half of the recipe plus 1/2 of a medium avocado (total calories 450). For a smaller portion, you could do 2 cups of the soup and 1/2 of the medium avocado for 350 calories.

|Chop onion. Another reason why I might get a food processor as smaller chunks of onion would have been better in this soup.|
|Heat oil over medium heat, add garlic and onion and fry until brown. Add in chicken (I diced into cubes, you could also boil first and shred before you add).|
|Add in tomatoes, cumin, chili powder, crushed chilis, bring to a boil.|
|Simmer on low for 20-30 minutes.|
|Best part of the whole recipe, avocado. Of course. Who doesn't love avocado?|
|Serve it up and enjoy. I was home alone this night so decided to work on my blog as I devoured this soup. This is what my office looks like sitting at the kitchen bar.|
