Giant Spicy Cabbage Bowl with Kelp Noodles, Carrots, Mushrooms, Prawns and Peanut Sauce - 250 Calories per Serving!
A new first - blog creation with a three year old! I recently took all of my gear (notebook, ipad, camera, ingredients etc) on a road trip and created this recipe with the help of my sister and her son. We had a window of opportunity as her husband and other son were out of town, so she called and said please make me something with Kelp noodles and peanut sauce (two items we know her husband wouldn't eat). I was in the middle of creating this recipe in my head and told her that as long as she didn't mind being part of the creation, I would be over in 5 minutes!
(250 calories per serving)
Green cabbage, 6 cups shredded
Mushrooms, sliced, 3 cups
Carrot, 1 medium, sliced
Daikon, 2 cups, sliced
Kelp Noodles, 1 bag
Prawns, 1 bag
Crushed Red Chili Pepper Flakes
2 tbls PB2
2 tbls Thai Sweet Chili Sauce
1 tbsp Siracha Hot Sauce
Not that hard! - Make the sauce by mixing all of the ingredients together and put aside. Prepare all of the remaining food and then stirfry, add in sauce, add in cooked prawns and serve and enjoy!
My guest blogger. He was intrigued by the Kelp Noodles! And, he is also sporting really good Christmas pajamas in the spring.
Too bad, he couldn't figure out how to open the bag!
I made the sauce very thick for this as I knew that the cabbage and the kelp noodles can be quite wet when you cook them.
Setting up in a new kitchen! It was a tad tricky as I didn't have the same light as I do from my kitchen. Also, we groaned when we discovered that I need wi-fi and had to remember what the password was.
Stir fry all the vegetables together and then add the sauce.
Add the prawns
Top with cilantro
A kid friendly place mat for the guest blogger.
