I have started to enjoy making foods that can be used in various dishes. I have a quirk about always eating leftovers and there is nothing worse when you make a specialty item that just sits in the fridge as it doesn't go with anything. Cauliflower popcorn met my requirements for a great food to have for many different meal plans. Enjoy on its own, add to a salad, heat up as a side to a dinner, the possibilities are endless! Its also super easy to make, requires no special ingredients and is super healthy (1 cup is only 30 calories)!
- 1 large head of cauliflower makes about 4 cups of popcorn
- 1 cup = 30 calories
- Break a head of cauliflower into bite size florets
- Spread on a baking sheet
- Spray with cooking spray
- Lightly sprinkle with your choice of seasoning (I used pepper, salt, paprika and curry)
- Bake for 20-30 minutes at 425' until the cauliflower is slightly browned
