Pinks Cobb Salad

This is a meal in a bowl! Using Cauliflower Popcorn, Eggs, Cheese, Carrots and much more, who ever said that salad wasn't filling? Very little modifications needed to make this a husband friendly version (I gave him 2 hard boiled eggs and used regular cheese rather than soy cheese).  


Serves One, 315 calories 

Ingredients:

  • 1/2 medium tomato
  • 1 hard boiled egg
  • 1 cup Cauliflower Popcorn
  • 1/2 cup shredded carrots
  • 1/2 bell pepper
  • 1 cup cucumber slices
  • 3 cups spinach
  • 1/4 cup soy cheese, shredded
  • Bolthouse ranch dressing (2 tbls)
