Zucchini Pasta with Avocado Cilantro Pasta Sauce

Another variation of zucchini noodle pasta, this time with ribbon noodles, avocado cilantro sauce, mushrooms, green pepper & prawns!



Ingredients:

Makes three very large servings or around 250 calories per serving. 
  • The sauce was around 260 calories
  • The zucchini noodles using 3 large zucchini was around 135 calories
  • The prawns (1 bag) were 290 calories

Sauce:

1/2 avocado
1 bunch of cilantro
1/2 freshly squeezed lime
2 tbls of Sirachi Chili Sauce
1 medium green pepper, chopped finely
Small pearl mushrooms (1 container)

Topping: 

1 Bag frozen prawns 

Noodles: 

3 large zucchini - using spiralizer, ribboned 


Directions:



Mix the avocado, cilantro, lime and hot sauce in a blender. 

Lightly fry the mushrooms and green peppers.

Add the sauce into the frypan.

Let simmer on low while you prep the rest of the meal.

I ribboned the zucchini noodles this time, you can also make into noodle shapes or whatever you want depending on your kitchen appliances!

I sauteed lightly in a fry pan with some spices.

I then cooked up the prawns and mixed in with the sauce.

Served the sauce on top of the noodles. I don't like to mix together as the noodles can get all mushy if you try to toss them too much. 

Sat on the deck and enjoyed this lovely creation.

Husband Friendly Version


Husband didn't want zucchini, so we boiled then fried up some perogies that he put the sauce on top of.

That looks absolutely delicious. Funny when I first saw the photo I thought where can I get this....and then noticed it was on Pinks Pantry...YEAH!

That sauce sounds amazing! What spices did you use on the zucchini?

I like my food spicy so I used cayenne pepper, chili flakes, pepper, smoked paprika and truffle salt on the "noodles"
