Blackberry Goat Cheese Salad

Blackberries are not just for desserts! Make a delicious fresh summer salad with blackberries and goat cheese.  


Its blackberry season! I am fortunate enough to have a massive blackberry collection in my own backyard. My neighbors and my friends all come over to enjoy in this fresh delicious fruit. I use the blackberries in my smoothies, in my oatmeal and I freeze them for the long dark depressing winter months when the stores charge ridiculous amounts for fruit. It doesn't always have to be sweet though, why not add them to a salad with some cheese for a simple, quick and easy dinner option. This recipe was such a success that my husband actually requested it for dinner tonight. I didn't object. 



The base salad with no protein is 300 calories. I added chicken, making it a delicious filling 450 calorie dinner. Tonight we are using tuna instead of chicken as we scored a great piece of raw tuna the other day. 


Ingredients: 


  • Spinach, raw, 4 cups
  • Blackberries, 1.5 cup
  • Crumbled goats milk feta cheese, 2.5 tbsp
  • Shredded beets and carrots, 1/2 cup
  • Balsamic glaze, 2 tbls
  • Chicken breast, 3.5 oz
  • Hot sauce, to taste

Wondering how I got my beets and carrots so finely sliced? I didn't! I purchased them from the Fairways salad bar, 2 large containers of them for less than $2.50. 


The balsamic glaze is a really great dressing option as it offsets the sweetness of the blackberries but compliments the goat cheese and spinach. 


Husband Friendly Version: 

Only variation of the husband friendly version was he used a ton more chicken and cheese. He would have had the beets and carrots but there wasn't enough for him and of course, ladies first rule applies in our household.
