Japanese Eggplant Stirfry

Asian stir fry with shiitake mushrooms, eggplant, chicken & red chard. Tossed in a black bean sauce & served with roasted sesame seeds


  • 1 Japanese eggplant
  • 1 large bag of Shiitake mushrooms
  • 1-2 chicken breasts
  • 1 bunch of red chard
  • Green onions
  • Fresh basil
  • Red hot pepper (if you like spice)
  • Black bean sauce (pre purchased this time due to time constraints)
  • Sesame seeds (to taste)

Serves 2, approximately 400 calories per serving


Chop, stirfry, add sauce. Enjoy

Husband Friendly Version

Udon noodles were served instead of the red chard.

This is great! I like eating japanese food because those kind of food are really healthy and delicious. I will try this recipe, I'm sure I can eat a lot with this.
