Here is a quick easy salad idea for you! Don't be afraid of Silken Tofu. It is much softer than regular tofu and crumbles when you take out of the package, but its really good and almost tastes more like a yogurt/cottage cheese than regular tofu! And who ever said salads have to be cold, heat up that leftover spaghetti squash and enjoy this giant salad!
- 3 cups shredded spaghetti squash
- 3 cups raw spinach
- Silken tofu (1/2 package)
- Soy sauce (to taste)
- Hot sauce (to taste)
Serves one (or two if you don't like giant salads), 250 calories for the whole serving!
