I love fall! I love spicy soups. I love using my crock pock. I also love being able to throw together a quick soup in 5 minutes when you get home from work and are hungry, tired and cold!
This was not a planned recipe. I found a can of Tom Yum Soup at the grocery store and bought it the other day with no idea what I would do with it. I came home and was starving and found 1/2 bag of leftover kelp noodles, some leftover tofu and viola - inspiration hit!
You won't every find me eating at a Thai restaurant as the amount of coconut milk and oil they use to make their delicious dishes would put my body into shock. But why not make it at home?
One bowl of Tom Ym Soup at Thai Express Bowl can run you 650 calories. Switching out the rice noodles, avoiding the coconut milk, you can create a GIANT bowl of soup for 300 or if you don't have the same appetite as me, split with someone for 150 calories per person.
- 1 can - Tom Yum Soup
- 1 can chunked crab meat (or fresh prawns or chicken)
- 1/2 bag Kelp Noodles
- 2 cups bean sprouts
- 1/4 package medium firm tofu
- Chopped green onion, garnish
