White Bean Turkey Chili

Got some leftover turkey from American thanksgiving? Please don't use any leftover Canadian turkey as it is probably gone bad by now! Regardless, this is such a great simple crockpot soup recipe! I am disappointed with my soup pictures. Not only is always dark at night which reduces my ability to food pictures in the day (number one success factor), I struggle with how to take good soup pictures. Would you just believe me if I said it was delicious. It also freezes really well. Trust me.





This recipe makes around 7 cups, for 125 calories per cup. Its very filling and I made myself three large portions for future work lunches.


Ingredients:


  • 1 package turkey breast culets (.4 kg)
  • 1 can white spanish beans (14 oz)
  • 1 can cannellini beans (14 oz)
  • 2 cloves of garlic, minced
  • 1/2 cup diced sweet onion
  • 1 can diced tomatoes (14 oz can)
  • 2 tbls tomato paste
  • 1 3/4 cup chicken broth 

To season:

  • chili powder
  • crushed red pepper flakes
  • cumin
  • cayenne peper
  • salt and pepper

There really aren't any directions. Throw it in the crockpot, let simmer for 4-6 hours, test the seasoning along the way and adjust to your desired taste. Serve and enjoy.
