Turned out excellent and it has saved us a couple of nights now when we couldn't or didn't want to cook a fancy meal.
- 30-40 Cherry Tomatoes
- 1 medium Red Pepper
- 16 oz crimini brown mushrooms (2 - 8 oz packages)
- 1 medium yellow onion
- 2 tbls crushed garlic
- 1 jar of vegetable pasta sauce (zucchini)
- Spices - Basil, oregano, coriander, dill, chili pepper, cayenne, cumin, cajun
- 1 cup of Yves veggie ground round (or your choice of ground meat)
This recipe makes 8 cups for 125 calories per cup
Directions:Cut up the cherry tomatoes, spray a pan with a little bit of oil and cook at 350' until they are nice and roasted (I think mine took 35 minutes).
Then add your mushrooms and cook for another 2-3 minutes.
Cherry tomatoes are done!
I served mine over spaghetti squash.......obviously....

Husband Friendly version - Serve his with pasta and melt some cheese on top. I didn't get a picture as he ate it so quickly. I guess that's a good sign!
