Roasted Cherry Tomato Pasta Sauce

I go through major swings in my cooking. Some weeks its all about the fresh vegetables and cooking every night. Other weeks, we are busy and I just want to grab something out of the freezer and defrost the quickest dinner I can. At the end of the summer, I purchased way to many cherry tomatoes and decided to make my own tomato sauce with the goal of having a nice smoky roasted tomato sauce from cherry tomatoes!


Turned out excellent and it has saved us a couple of nights now when we couldn't or didn't want to cook a fancy meal.


Ingredients:

  • 30-40 Cherry Tomatoes
  • 1 medium Red Pepper
  • 16 oz crimini brown mushrooms (2 - 8 oz packages)
  • 1 medium yellow onion
  • 2 tbls crushed garlic
  • 1 jar of vegetable pasta sauce (zucchini)
  • Spices - Basil, oregano, coriander, dill, chili pepper, cayenne, cumin, cajun
  • 1 cup of Yves veggie ground round (or your choice of ground meat)

This recipe makes 8 cups for 125 calories per cup



Directions:

Cut up the cherry tomatoes, spray a pan with a little bit of oil and cook at 350' until they are nice and roasted (I think mine took 35 minutes).


While those are coking, fry up your onions with spices with a little bit of oil.


Then add your mushrooms and cook for another 2-3 minutes.



Cherry tomatoes are done!


Add tomatoes in with the red pepper and the sauce. You could make your own pasta sauce, but I like to use a simple store bought. Remember, this is all about being simple!


Simmer on low for 30 minutes or so. Then eat right away or put in freezer bags to use for future meals!.


I served mine over spaghetti squash.......obviously....


Yep, looks good to me!


Husband Friendly version - Serve his with pasta and melt some cheese on top. I didn't get a picture as he ate it so quickly. I guess that's a good sign!
