I did a ton of research in attempt to make this salad into a healthier version of the traditional broccoli salad that is mixed with sour cream or mayo or some other god awful calorie ridden dressing. The results were very successful and I will be repeating this recipe for sure!
The recipe below made around 10 cups and served a dinner party of 8 adults (with grapes picked out for the toddlers). It is around 65 calories per cup!
- 3 cups strawberries
- 2 cups grapes
- 5 cups broccoli
- 1 small container of greek yogurt
- 3 tbls balsamic vinegar
- sprinkle of cinnamon
- packet of truvia
Husband Friendly Version
I don't recall if my husband tried this one or not. At dinner parties and potlucks he is usually so happy to have meat and cheese served he stays clear of my food as he eats it everyday at home. One of the other husbands mentioned he would have liked some slivered almonds on the salad, so we will trust him and add that to the husband friendly approved salad list.
