This is a great make ahead meal -- freezer friendly hearty meal that should be a staple in any house. The great thing about it is that it is so versatile. You can eat as a plain soup. Or you can put on top of spaghetti squash. Add some chicken. Add some cottage cheese. Options are endless. And not only is it filling and hearty, it is super healthy and a great option for those who are in need of lots of food and not a lot of love handles.

Total recipe is 1,300 calories. I split into 6 giant servings for 220 calories each. I like to keep my calories low on the base soup so I can add lots of other goodies when it comes to serving it!
- 8 cups vegetable or chicken broth
- 1 jar of salsa (650 ml)
- 1 can green chilis
- 1 head green cabbage, shredded
- 5 carrots, diced (400 grams)
- 2 packages of crimi mushrooms (8 oz each)
- 1 sweet onion, diced
- 3 tbls garlic, minced
- 2 bell peppers, diced
- 1/2 cup cilantro
- 2 limes, juiced
- chili pepper
- onion powder
Added in cottage cheese and some yves veggie ground round.
DirectionsPut all ingredients into giant pot, bring to boil, cover and reduce heat and simmer until vegetables are tender.
At work, added in cottage cheese and some tuna! Why not. Its your soup, your choice!
