Scrambled Eggs with Tofu

Oh scrambled eggs. The easy go to meal that everyone loves. I love eggs. But STOP there. Only if they are cooked to my liking. In fact, I haven't met someone that likes their eggs the same way yet. I give praise to the breakfast restaurants who deal with these needy egg people on a daily basis. Think about it. Poached eggs come soft, medium, hard. If you give me slime anywhere on my plate, I will return it. Scrambled - some like yolk, some like cheese. Fried eggs (some like crispy edges, others like them over easy). By far the most versatile food and as an apocalypse planner in my spare time, I am constantly thinking about how to about how to bring a chicken or two with me when I retreat to my pre-planned hidden location.

I have an on and off again love affair with eggs. They are always in my diet but show up in different trends. Thus far in my foodie world, this has included: fried egg sandwhiches, poached eggs, hard boiled eggs, scrambled eggs and egg white omelettes. As we are in the egg white series right now, recipes have no moved into frozen egg whites, egg white mug cakes, egg white desserts and egg white oatmeal!

Pinks Pantry is all about being creative with the basic menu items. Since I cannot just stop at normal, why not move into the #strangebutgood category. Most recently, I have become addicted to tofu/egg white scrambles. I find the tofu and egg white scrambled together make such a great combination. Fluffier, heavier, flavor and protein goodness.


Serves one (130 calories per serving)
  • 1/3 cup of egg whites
  • 1/4 container of medium firm tofu
  • 2 tbls nutritional yeast
  • Almond milk  - dash


In a microwave friendly bowl, mix the egg whites, tofu, nutritional yeast and almond milk. Put in microwave for around 1 minutes, mix with a fork, keep cooking in 30 seconds intervals until its light and fluffy! Eat this way or add to a giant plate of vegetables!
