Stuffed Kabocha Squash

The concept was simple. The results were fabulous. The hole in a squash just begs to be stuffed. We have stuffed acorn squash already. So why not kabocha?  Really you can stuff with anything you want. The point of this recipe is to get your creative cooking juices flowing and see if I can convince you to stuff a squash tonight. 

Don't remember what Kabocha is? Read about my original post here. I cooked my squash in the oven until it was about 20 minutes away from ready (400' for 45 minutes). I then filled with mushrooms, spinach, jalapeno's and some green onions. Put back in the oven for 20 minutes, and in the last 5 minutes I broiled some cottage cheese on top. I then patiently took some pictures before I devoured in less than 2 seconds. 

Stuff your squash. Stuff it with anything. Enjoy it.

You inspired me. I stuffed a kabocha squash last night - delicious! Even better as leftovers for lunch.
