Sweet Egg White Omelette

I have been saving the last of the egg white series for the best yet! This one is the winner!!!!
Colby at Eat Clean Live Strong deserves all of the credit for this recipe. Her instagram account (@eatclean_livestrong) is full of #sweetomelettes and they just looked so delicious that I had to give this recipe a try.


The concept: a delicious egg white dessert in the form of an omelette. A high protein treat with a low calorie count. Base recipe is no more than 75 calories and then add in whatever you stuff in it, or cook on top or  roll it in or scramble it in. The options are endless. It is perfection. Unless you stuff it with tablespoons of peanut butter like I do...nobody is perfect.

Egg White Omelette


  • Whisk 1/2 cup liquid egg whites with 1.5 - 2 tbls of water
  • Whisk to get fluffy. Get an arm workout doing this. WHISK
  • Add in sweetner or cinnamon
  • Add in vanilla or almond extract


 My old school whisk has come in use for the first time in 10 years in my kitchen. It does wonders for whisking those egg whites!


Options:


  • Blueberries
  • Raspberries
  • Banana's
  • Shredded zucchini,
  • 1/3 cup pumpkin puree
  • Sprinkle some oatmeal on top for crunchy
  • PB2 in the batter, or stuffed with peanut butter
  • Cottage cheese and mixed berries
  • Add in some coconut flour and baking powder for a "pancake like"
  • Top with maple syrup
  • Throw on some ground coffee when cooking
  • Toss on some oatmeal with in pan for a "crunchy top"


Cocoa powder, topped with a banana and drizzled with chocolate peanut butter

Directions

Cook over medium heat in a sprayed non stick pan, cover with a lid. Now if you are skillful you can flip. If you have trouble flipping omelettes, no need on this recipe. Just cover until the egg is fully cooked. In the picture below I sprinkled ground coffee while I was cooking it! I forgot to mention the smaller the pan, the more of a "pancake" you will create, a large pan is more of a "crepe". I do both. Depends if I want to roll it or stuff it or pile stuff on top!



Transfer to a plate and stuff/top with whatever you desire



I stuffed this one with cottage cheese, oatmeal and berries, then topped with some syrup!


My sister made this one. I have tried to politely tell her that my blog requires landscape photos not portrait, perhaps calling her out on here will fix this problem :)


But thank you to my sister who participated the whole way through this egg white series. She worked with me to help save time in the recipe production process.
