Sometimes having someone in your house with a food allergy or a food dislike is what creates the best new recipes! My husband does not like red based pasta sauces. Not sure why, but regardless it makes me have to come up with new ideas for how to serve pasta to him! Having convinced him that he likes zoodles (zucchini noodles) as long as I had some rice to his, I have already achieved a huge milestone from not having to make him pasta anymore. Next conquest is to find a sauce he does like! Therefore, since he loves Thai food, I thought why not a green curry sauce for the zoodles and voila, Thai Zoodles was born.
This recipe made 2 giant portion sizes for less than 300 calories per portion.
- Prawns (1 bag of frozen prawns)
- Garlic scapes (4 stalks)
- Mushrooms (1 package of sliced crimini)
- Zucchini (Spiralized!)
- Light coconut milk (1/2 cup)
- Thai Green Curry Paste (2 tlbs)
- Sesasme Oil (1 tbls)
Read this post here (Spiralizer Review) to get your noodles into spirals! I sauteed these noodles for around 1 minute at high heat before serving with the thai sauce.
The sauce is pretty simple, Sautee the prawns, fry the mushrooms, add in coconut milk, curry paste and any other seasoning. Serve on top of the sauteed noodles. You have dinner served in less than 15 minutes. Add in some fresh thai basil. Voila!
