Pumpkin Spiced Overnight Oats

In my previous post, I mentioned that I had been hoarding pumpkin recipes, including my newest favorite variation of oatmeal - Pumpkin Cranberry Oatmeal. I have also been using it in my overnight oats.

Since there is no easy way to get a good picture of overnight oats, I stopped trying. So excuse the mess. Just trust me that its delicious and filling.


This recipe packs 24 grams of protein and 400 calories. It keeps me full till lunch (well 10am, but close enough right?).

Ingredients


  • 1/2 cup oatmeal
  • 1/2 cup canned pumpkin
  • 1/2 cup cottage cheese
  • 1 cup almond milk
  • 1 cup grated carrots
  • 1/2 cup blueberries
  • Pumpkin pie spice (or make your own, cardamom, allspice, cinnamon, nutmeg, ginger, cloves)
  • Sweetener to taste


Mix it all together. Let sit for a few hours. Enjoy!
